Beef Tomato Eggplant Casserole - cooking recipe
Ingredients

1 lb. ground beef or turkey
1/4 c. chopped onion
1 clove garlic
2 Tbsp. oil
1 Tbsp. flour
1 tsp. salt and pepper
1 tsp. oregano
2 large ripe tomatoes
1 medium eggplant
1 c. grated sharp cheese
Preparation

Brown meat, onion and mashed garlic in oil.
Add flour and seasonings.
Stir and cook for 5 minutes.
Remove garlic.
Peel and slice eggplant.
Boil in salted water until just tender. Drain and set aside. Put browned meat on bottom of 1 1/2-quart casserole.
Arrange slices of cooked eggplant and sliced tomatoes on top.
Sprinkle with salt and pepper.
Cover with grated cheese.
Bake at 350\u00b0 for 30 to 40 minutes until cheese is melted and bubbly.
Makes 4 to 6 servings.
