Ingredients

2 c. milk
3/4 c. sugar
1/2 c. Bisquick
4 eggs
1/4 c. melted margarine
1 1/2 tsp. vanilla
1/2 tsp. coconut flavoring
shredded coconut
Preparation

Mix together milk, sugar, Bisquick and eggs.
Pour into a blender and blend for 2 minutes.
Add margarine, vanilla and coconut flavoring.
Blend for 2 more minutes.
Pour mixture into a 9-inch greased and floured pie dish.
Let stand 5 minutes; sprinkle with coconut, a cup or so.
Affix a foil collar, about 2 inches wide around pie dish, covering all but center of pie to prevent overbrowning.
Remove collar the last 10 minutes of baking if pie isn't a lovely golden brown.
Bake in preheated oven at 350\u00b0 for approximately 40 minutes or until the center is set and golden brown.
Serve warm or cold.
