In Memory Of Fr. Jack Price Potatoes - cooking recipe
Ingredients

1 c. sliced onions
1 c. sliced peppers (rings)
4 large potatoes (skins on), sliced about 1/4 inch thick
olive oil
salt and pepper
parsley
Preparation

Make large foil \"boats\" out of heavy aluminum foil or 2 sheets folded together.
Place about 1 tablespoon of oil on bottom.
Lay a row of sliced potatoes, green peppers and onion rings on top. Salt and pepper.
Add another row of sliced potatoes.
Sprinkle with parsley.
Close foil tightly.
Place on hot charcoal grill for 7 to 10 minutes.
Flip boat over for another 4 to 5 minutes. Open foil; place on plate or eat at campfire when camping.
