Peanut Brittle - cooking recipe

Ingredients
    2 c. sugar
    1 c. light corn syrup
    1 c. water
    2 c. shelled, roasted peanuts
    1 tsp. salt
    2 Tbsp. butter or margarine
    2 tsp. soda
Preparation
    Combine sugar, syrup and water in a large heavy skillet.
    Cook slowly over medium heat, stirring constantly, until sugar dissolves.
    Continue cooking until mixture reaches soft ball stage (240\u00b0) or until small amount of mixture dropped into very cold water forms a soft ball.
    Add peanuts and salt.
    Cook to the crack stage (290\u00b0 to 300\u00b0) or until small amount dropped in very cold water separates and threads which are hard and brittle.
    Watch mixture to keep from burning.
    Add butter and soda, stirring to blend.
    While still warm, pour into 2 large pans.
    Pull to desired thickness.
    When cold, crack into pieces.
