Rice And Bean Casserole - cooking recipe

Ingredients
    6 slices bacon
    1 (15 oz.) can black-eyed peas with jalapeno peppers
    1 (16 oz.) can stewed tomatoes
    2 c. uncooked instant rice
    1 medium onion, sliced
Preparation
    Fry bacon.
    Remove from pan and drain all but 2 tablespoons of oil.
    Mix the rest of ingredients in pan.
    Cook, stirring until well coated.
    Pour into 9 x 13-inch baking dish.
    Crumble bacon over top.
    Bake at 350\u00b0 for 30 minutes or until bubbly.
