Potato Soup With Leeks - cooking recipe

Ingredients
    2 tsp. butter
    1 onion, chopped fine
    1 clove garlic
    2 c. chopped leeks (use some green tops)
    3 c. sliced potatoes
    2 tsp. flour
    8 c. beef broth
    1 c. milk or cream
    salt and pepper to taste
Preparation
    Melt butter in large pot.
    Add onion and garlic.
    Cook about 5 minutes (do not brown).
    Add leeks; cook 5 minutes more.
    Add potatoes; add flour.
    Add seasoning and hot beef broth.
    Bring to boil and simmer until done.
    Add chopped chives and parsley when serving.
    Makes 8 servings.
