Golden Oyster Stew - cooking recipe
Ingredients

1/2 c. chopped onion
1/2 c. sliced celery
2 Tbsp. margarine
2 c. sliced mushrooms
2 Tbsp. flour
2 c. milk
1 c. shredded sharp Cheddar cheese (4 oz.)
1 can cream of potato soup
1 (2 oz.) jar diced pimento (undrained)
1/4 tsp. salt
1/4 tsp. pepper
1/4 tsp. hot sauce
1 (12 oz.) standard oysters (undrained)
Preparation

Saute onion and celery in margarine until tender.
Add mushrooms and cook 2 minutes, stirring constantly.
Gradually add milk; cook over medium heat, stirring frequently until mixture is thickened and bubbly.
Stir in cheese, pimento and seasonings. Continue to cook and stir often until cheese melts and mixture is thoroughly heated.
Add oysters and liquid.
Reduce heat and simmer 5 to 8 minutes or until edge of oysters curl.
Yields 6 1/2 cups.
