Easy Blueberry Muffins - cooking recipe

1 c. fresh blueberries or 1 c. canned blueberries, drained
2 c. plus 2 Tbsp. all-purpose flour, divided
1/4 c. sugar
1 Tbsp. plus 1 tsp. baking powder
1/2 tsp. salt
1 c. milk
1 egg
2 Tbsp. vegetable oil
Preparation

Dredge blueberries in 2 tablespoons flour.
Combine remaining 2 cups flour, sugar, baking powder and salt.
Beat together milk, egg and oil; add to dry ingredients and stir just until moistened. Fold in blueberries.
Fill greased muffin pan two-thirds full. Bake at 400\u00b0 for 20 to 25 minutes.
Remove from pan immediately. Yields 1 dozen.
