Eggplant Lasagna - cooking recipe
Ingredients

1 lb. box lasagna
1 eggplant
peanut oil
1 jar spaghetti sauce
1/2 lb. sliced Provolone cheese
Parmesan cheese
Preparation

Cook noodles.
Drain and peel eggplant and slice thin.
Fry in peanut oil until soft.
Drain on paper towels.
Place some sauce on bottom of baking dish.
Layer noodles, sauce, eggplant, cheeses.
Continue layers, ending with cheeses.
Bake at 350\u00b0 for 40 minutes or until hot.
