Ingredients

1 c. raw chickpeas
1 tsp. baking soda
1 c. tahini
1/2 c. fresh lemon juice
1 tsp. salt
2 cloves garlic or more
1/2 tsp. cumin
paprika
Preparation

Soak chickpeas in water to cover and baking soda overnight. Add water to cover by several inches to chickpeas and simmer one hour.
Drain, saving about one cup water.
Puree all ingredients except paprika in food processor, adding 1/4 cup reserved water. Place in serving bowl and sprinkle with paprika.
