No-Fat Chicken Salad Oriental - cooking recipe

Ingredients
    3/4 c. cooked, boned, skinless chicken breast meat, diced
    1 (10 1/2 oz.) can mandarin oranges canned in juice, drained
    1/2 c. sliced water chestnuts
    4 Tbsp. chopped green onion
    1/4 c. chopped red pepper
    1/2 c. plain nonfat yogurt or yogurt cheese
    1/2 c. mashed banana
    3 Tbsp. honey
    1 Tbsp. lemon juice
    2 tsp. apple cider vinegar
    1 tsp. finely chopped ginger
    dash of white pepper (optional)
    3 c. chopped romaine lettuce or dark leafy greens of choice
Preparation
    In mixing bowl, combine chicken, 1/2 cup orange segments, water chestnuts, 2 tablespoons green onion and red pepper.
    Next, combine yogurt, banana, honey, lemon juice, vinegar, ginger and white pepper in blender.
    Puree until smooth.
    Pour over chicken; mix well and chill.
