Microwave Chocolate Oatmeal Muffins - cooking recipe
Ingredients

1 c. flour
2/3 c. quick oats (uncooked)
6 Tbsp. sugar, divided
1 tsp. baking powder
1/2 tsp. baking soda
3/4 c. applesauce
1/2 tsp. salt
2 eggs
1/2 c. oil
1/2 tsp. vanilla
confectioners sugar
Preparation

In large bowl, combine flour, oats, sugar (3 tablespoons), baking powder, baking soda, cinnamon and salt.
Add chocolate chips.
In small bowl, combine eggs, oil, applesauce and vanilla and mix remaining sugar until well blended.
Add to flour mixture and stir until dry ingredients are just moistened.
Spoon into paper lined microwave-safe pans, filling each about 2/3 full. Microwave on High power for 2 to 3 minutes.
Sprinkle with confectioners sugar.
