Mexican Chicken Spaghettini - cooking recipe
Ingredients

6 oz. spaghettini or spaghetti
1 1/2 c. chopped tomatoes
1/2 c. chopped scallions
2 Tbsp. minced fresh cilantro
1 Tbsp. fresh lime juice
1 Tbsp. oil
2 tsp. minced deveined jalapeno pepper
3/4 tsp. salt
2 tsp. mild or hot chili powder
3/4 tsp. cumin
pinch of red pepper
15 oz. skinless chicken breast, cut into 1 inch pieces
fresh cilantro sprigs to garnish
Preparation

Cook spaghetti 8-10 minutes to tender, drain.
Keep warm.
