Gefilte Fish - cooking recipe

Ingredients
    6 lb. white fish (pike, carp or whitefish)
    5 onions
    2 qt. water
    4 tsp. salt
    1 1/2 tsp. pepper
    3 eggs
    3/4 c. ice water
    1/2 tsp. sugar
    3 Tbsp. matzo meal
    3 carrots, sliced
Preparation
    Filet fish but save skin, head and bones.
    Combine skin, head and bones with 4 sliced onions and 1 quart water, 2 teaspoons salt and 3/4 teaspoon pepper.
    Cook over high heat.
