Ingredients

2 c. plus 2 Tbsp. flour
1 tsp. baking powder
1 tsp. soda
1/2 tsp. salt
1/2 c. shortening
1/2 c. brown sugar, packed
1/2 c. white sugar
1 beaten egg
1 tsp. vanilla
1 small can crushed pineapple
2 c. butterscotch chips
Preparation

Sift together the flour, baking powder, soda and salt.
Set aside.
Cream together shortening and the sugars.
Add 1 beaten egg, the vanilla, then add dry ingredients.
Add the can of pineapple with juice and stir in the butterscotch chips.
Bake at 375\u00b0 for 10 minutes.
