Southwest Express Chicken Salad - cooking recipe

Ingredients
    1 medium onion, cut into 1/4-inch wedges
    1 Tbsp. vegetable oil
    3 c. shredded, cooked chicken or turkey
    2/3 c. Pace picante sauce
    2 medium tomatoes, diced
    1 tsp. ground cumin
    3/4 tsp. salt (optional)
    1/2 tsp. dried oregano leaves, crushed
    5 c. shredded lettuce
    1/4 c. chopped cilantro
    additional Pace picante sauce (optional)
Preparation
    In a large skillet, cook and stir onion in hot oil until onion is tender, but not brown.
    Add chicken, 2/3 cup picante sauce, tomatoes, cumin, salt and oregano.
    Simmer 5 minutes, stirring occasionally.
    Arrange lettuce on 4 dinner plates or a large platter. Top with hot chicken mixture.
    Sprinkle with cilantro. Serve with additional picante sauce, if desired.
