Potato Omelette - cooking recipe

Ingredients
    3 eggs
    1/2 lb. potatoes, boiled
    1 oz. butter
    a little chopped parsley
    salt and pepper
Preparation
    Beat the eggs thoroughly and stir in the parsley.
    Cut potatoes into small pieces and add to eggs.
    Melt the butter in a skillet and when just beginning to smoke faintly, pour in the omelette mixture.
    Cook over a moderate heat, until golden brown. Fold over and serve on a very hot plate.
