Chicken Fricassee - cooking recipe
Ingredients

3 1/2 lb. chicken, cut up
5 Tbsp. flour
1/2 c. chopped celery
1/2 c. chopped parsley
1/2 tsp. dried thyme
3 Tbsp. salad oil
1 large onion, chopped
3 c. hot water
1 bay leaf, crumbled
salt and pepper
Preparation

Salt and pepper chicken.
Brown slowly in oil over medium heat.
Remove pieces of chicken when browned.
Stir in flour until smooth.
Cook about 15 minutes, stirring constantly, until a rich brown roux.
Lower heat.
Add onion and celery; cover and simmer about 10 minutes.
Stir often.
Gradually stir in water.
Add parsley, bay leaf, thyme, chicken pieces and salt and pepper to taste.
Cover and simmer about 40 minutes.
