Vegetable Spread - cooking recipe

Ingredients
    3 carrots, scraped
    1/2 sweet red pepper
    1 stalk celery
    1/2 c. walnuts, shelled
    1 tsp. fresh grated ginger
    1 tsp. fresh grated lemon rind
    2 to 3 tsp. mayonnaise
Preparation
    In food processor, chop together carrots, red pepper, celery and walnuts to coarse consistency. Add ginger, lemon rind and enough mayonnaise to hold mixture together. Chill before serving. Makes 1 1/2 cups.
