Hot Oyster Surprise - cooking recipe

Ingredients
    3 doz. fresh oysters
    1 1/2 Tbsp. salt (optional)
    1/2 c. olive or canola oil
    1 tsp. allspice
    pinch of cayenne pepper
    1 can or jar jalapeno peppers, cut into strips
    3 cloves garlic, broiled and chopped; or microwave 1 minute on paper plate; peel and microwave 2 minutes until soft, then chop
    2 Tbsp. fresh lemon juice
    4 onions, chopped fine
    1 c. vinegar
    1 tsp. black pepper
Preparation
    Shell and clean oysters; put in pot with 1 cup water, lemon juice and half of the salt; simmer about 5 minutes.
    Soak the onions in 1 1/2 cups of boiling water with 1/2 of the salt for about 5 minutes.
    Drain well and saute in oil about 3 minutes. Then add to oysters; add vinegar, allspice, pepper, garlic, jalapeno peppers and 1 tablespoon jalapeno juice.
    Cover and let stand 24 hours.
    Serve with crackers and Tabasco sauce or other hot red sauce.
