Fiery Mediterranean Roast Pork - cooking recipe

Ingredients
    2 heads garlic (20 to 24 cloves), separated into cloves, peeled
    1/4 c. chopped fresh rosemary or 2 1/2 Tbsp. dried leaf rosemary
    2 tsp. salt
    2 Tbsp. fresh ground black pepper
    1 1/2 tsp. caribe (crushed Northern New Mexico red chile)*
    1/4 c. extra-virgin olive oil
    1 (5 lb.) bone-in pork loin roast
