Tomato Chutney - cooking recipe

Ingredients
    5 lb. tomatoes (red or yellow)
    2 lb. sugar
    1/2 tsp. salt
    1 orange, thinly sliced
    1 lemon, thinly sliced
    1 stick (3-inch) cinnamon
    1 piece whole ginger
    2 c. seedless raisins
    1/2 c. lemon juice
    1/4 tsp. Tabasco
Preparation
    Peel
    tomatoes
    and
    chop.
    Combine
    with
    sugar, salt, sliced orange
    and
    sliced
    lemon.
    Stir over heat until sugar dissolves. Add
    cinnamon
    and
    ginger.
    Bring to a boil; cook over low
    heat until thick, about 1 hour, stirring occasionally.
    Remove cinnamon and ginger.
    Add raisins and lemon juice and bring again to boil.
    Stir in Tabasco; pour into hot pint or half-pint jars and seal at once.
    Makes 3 1/2 pints.
