Easy Potato Soup - cooking recipe

Ingredients
    2 c. diced potatoes
    1/3 c. chopped onion
    3 Tbsp. butter
    1/2 c. water
    1 clove garlic, crushed
    1 1/2 tsp. salt
    1/8 tsp. pepper
    2 c. milk
    1 Tbsp. chopped parsley
Preparation
    Add the chopped onion and potato to melted butter with the water.
    Season with garlic, salt and pepper. Cover and cook slowly until potatoes are very soft.
    Add the milk.
    Continue cooking until soup comes to a boil.
    Then put through a sieve or blender. Return to the pan.
    Add the chopped parsley; adjust seasonings and heat thoroughly before serving.
    Yield: About 1 quart.
