Chicken Delight - cooking recipe

Ingredients
    3 Tbsp. flour
    2 Tbsp. melted butter
    1/2 c. milk, warmed
    1/4 c. grated cheese (Cheddar or Swiss)
    3 eggs, separated
    3 c. diced small, cooked chicken
    salt and pepper to taste
    cayenne pepper to taste
    paprika
Preparation
    Combine flour and butter.
    Add milk slowly, stirring constantly.
    Cook over hot water until thick.
    Add cheese, beaten egg yolks and chicken.
    Blend well.
    Season with salt, pepper and cayenne.
    Slowly, just a little at a time, fold in stiffly beaten egg whites gently.
    Pour into a well-oiled casserole.
    Sprinkle with paprika.
    Place in a pan of warm water.
    Bake in a 375\u00b0 oven until knife comes out clean, at least 2 hours.
    Serves 6.
