Barley And Wild Rice Pilaf - cooking recipe

Ingredients
    4 tsp. olive oil, divided
    1 c. chopped onion
    1/2 c. wild rice
    2 garlic cloves, minced
    4 c. water
    2 tsp. salt
    1 red bell pepper, diced
    1 c. sliced mushrooms
    2 garlic cloves, sliced thin
    4 c. packed torn spinach
Preparation
    Heat 2 teaspoons olive oil; add onion and saute until done. Add barley, rice and 2 garlic cloves and stir 1 minute.
    Add 4 cups water and salt; bring to boil.
    Reduce heat to low.
    Cover and cook until grain is tender and liquid absorbed, about 1 hour.
