Godfather Meat Loaf - cooking recipe
Ingredients

2 lb. lean ground beef
2 eggs, beaten
1 (8 oz.) can Ro-Tel chillies and tomatoes
3/4 c. Italian bread crumbs
3 cloves garlic, chopped
1/2 tsp. salt
1/4 tsp. pepper
4 thin slices boiled ham
6 slices Mozzarella cheese
1 c. Ragu Italian sauce
Preparation

In 2-quart batter bowl, combine ground beef, eggs, Ro-Tel chillies and tomatoes, bread crumbs, garlic, salt and pepper.
On large piece of wax paper, flatten meat mixture into rectangle. Arrange ham on top of meat, leaving 1-inch margin around edge. Place slices of cheese over ham slices.
Carefully roll up meat, using wax paper to lift.
Seal edges.
Place roll, seam side down, in microwave ring mold or on microwave roasting rack.
Microwave on 70% power for 25 to 30 minutes or until done.
Place meat loaf on microwave-safe serving platter.
Pour Ragu sauce over top. Microwave on 80% power for 1 to 2 minutes or until hot.
Let stand for 5 minutes before serving.
