Zucchini "Spiced Apple" Pickles - cooking recipe

Ingredients
    14 to 20 c. zucchini, peeled, seeded and sliced
    1 gal. cold water
    1 c. pickling lime
    3 c. white vinegar
    10 1/2 c. sugar
    1/2 tsp. oil of cinnamon and oil of cloves
    red or green food coloring
Preparation
    Soak zucchini in cold water and lime overnight.
    The next morning, drain and rinse thoroughly in clear, cold water.
    In large kettle, bring vinegar and sugar to a boil.
    Add the zucchini, cinnamon, cloves and food coloring.
    Boil until the zucchini is clear (about 50 minutes).
    Pack in sterilized jars. Seal and keep jars in hot water for 30 minutes.
