Potato Cheese Soup - cooking recipe

Ingredients
    2 c. cubed potatoes
    1 rib celery, chopped
    1 carrot, chopped
    1 medium onion, chopped
    4 c. water
    1 c. milk
    1 Tbsp. melted butter
    1 Tbsp. flour
    3 slices yellow cheese, cut in strips
Preparation
    Boil potatoes, celery, carrot and onion in water. When vegetables are tender, remove celery and carrots from water. Lower temperature. Mix the melted butter, flour and some of the milk in a skillet to make a thickening. Add salt and pepper to potato mixture. Add the rest of the milk and cheese. Cook until thickened.
