Creole Chicken Gumbo(Southern Style) - cooking recipe

Ingredients
    1 small hen or large fryer, cut into pieces
    1 c. chopped celery
    1 green pepper, chopped
    1/4 tsp. thyme
    1/4 tsp. Tabasco
    2 Tbsp. chopped parsley, fresh or dry
    1 large onion, chopped
    1 (16 oz.) can tomatoes
    1 bay leaf
    1 c. sliced okra
    8 oz. shrimp, canned or frozen cooked shrimp
    1/4 c. cooking oil
Preparation
    Cover chicken with water; season with salt and pepper and cook, covered, until tender.
    Remove meat from bones and cut into bite-sized pieces.
    Measure out 3 cups of broth.
