Noodles Nestled - cooking recipe
Ingredients

eggplant
1 medium onion, cut into large pieces
2 small garlic, cut
1 (6 oz.) can tomato sauce
3/4 lb. hamburg
wide noodles, macaroni elbows or rice
Preparation

Cut eggplant into 1/2 lengthwise; cut halves lengthwise.
Peel the 4 quarters.
Remove larger seeds.
Slice in 1/2-inch slices. Saute onion and garlic.
Saute eggplant slices.
Add tomato sauce. Fry hamburg.
Add all together but be sure to drain off hamburg grease.
Serve over wide noodles, macaroni elbows or rice.
Add favorite seasonings.
