Individual Cheesecakes - cooking recipe
Ingredients

14 vanilla wafers
4 (3 oz.) pkg. cream cheese, softened
2/3 c. sugar
2 eggs
1 tsp. vanilla
Preparation

Line muffin pans with paper liners.
Place a vanilla wafer in each cup.
Beat cream cheese with mixer until light and fluffy. Gradually add sugar and mix well.
Add eggs and vanilla, beating well.
Spoon mixture into liner filling, 2/3 full.
Bake at 350\u00b0 for 10 minutes; cool.
Can be frozen.
Thaw 5 minutes and add topping.
Top with cherry or blueberry pie filling, fresh fruit or 3/4 cup sour cream, mixed with 1/4 cup sugar.
