Gumbo - cooking recipe

Ingredients
    1/3 c. oil
    1/3 c. flour
    1 c. chopped onion
    1 c. chopped green pepper
    1 c. chopped celery
    4 cloves minced garlic
    2 tsp. gumbo seasoning
    1/2 lb. okra
    4 c. chicken broth
    1/4 c. sliced Polish sausage
    1 c. chopped tomatoes
    1 lb. cooked shrimp
    1 lb. shredded chicken
Preparation
    Heat oil in a heavy skillet and add flour.
    Stir over medium heat until caramel color.
    This mixture is called \"roux.\"
    Set this aside.
    Saute onion, pepper, celery and garlic in 2 tablespoons oil.
    Add gumbo seasoning and okra.
    Cook 3 minutes.
    In large pot, combine roux and vegetables.
    Stir in chicken broth, sausage and tomatoes.
    Simmer 20 minutes.
    Before serving, stir in shrimp and chicken.
    Simmer 2 to 3 minutes.
    Serve in bowls; garnish with chopped parsley.
    Makes 4 servings.
