Better Than Potato Salad - cooking recipe

Ingredients
    1 c. uncooked rice (Louisiana long grained)
    2 c. mayonnaise
    2 c. sliced celery
    1 medium onion, finely chopped
    4 tsp. prepared mustard
    1/2 tsp. salt
    4 hard-cooked, boiled eggs, chopped
    8 radishes, sliced
    1 cucumber, peeled and diced
    2 medium tomatoes, quartered
Preparation
    Cook rice according to package directions.
    Transfer to a large bowl; cover and chill.
    Add mayonnaise, celery, onion, mustard, salt and tomato to chilled rice.
    Mix well.
    Stir in remaining ingredients before serving.
    Serves 10 to 12.
