Lemon Rice - cooking recipe

Ingredients
    2 oz. butter
    3 oz. fine diced onion
    3 oz. fine diced carrots
    2 oz. lemon zest (1 lemon)
    1 pt. long grain rice
    2 pt. chicken stock
    1/4 c. lemon juice
Preparation
    Heat butter; saute onion and carrots.
    Add rice.
    Do not brown rice or vegetables.
    Add stock, juice and zest.
    Bring to a boil and simmer, covered, 18 to 20 minutes.
