Apricot-Glazed Sweet Potatoes(Serves 6) - cooking recipe

Ingredients
    1 1/2 lb. sweet potatoes
    1/4 c. dried apricot halves
    1/2 c. water
    1/2 c. apricot preserves
Preparation
    Peel potatoes and cut into 1 1/2-inch chunks.
    Cut apricots into quarters.
    In 2-quart pan, combine potatoes, apricots and water.
    Cover and cook over low heat until potatoes are tender, maybe 15 minutes.
    Add preserves.
    Cook, uncovered, until potatoes are glazed and water is gone.
