Enchilada Casserole - cooking recipe

Ingredients
    1 1/2 lb. ground beef, browned and drained
    2 packs uncooked corn tortillas
    3 c. grated Cheddar cheese
    2 packs taco seasoning
    4 c. tomato juice or V-8 juice
Preparation
    Mix taco seasoning into browned ground beef.
    Set aside.
    In a greased deep casserole dish, lay tortillas in bottom, overlapping to cover entire bottom of dish.
    Spread 1/2 of meat mixture over tortillas evenly and sprinkle 1/2 of cheese evenly.
    Continue with another layer of tortillas; then meat and then cheese.
    Pour tomato juice over entire surface, then bake in a 350\u00b0 oven until heated and cheese is melted (about 30 to 40 minutes).
    Serve on bed of lettuce and top with sour cream and diced tomatoes and onions.
    Serves 6 to 8 people.
