Upstate Minestrone Soup - cooking recipe

Ingredients
    1 lb. Italian sweet sausage
    1 Tbsp. salad oil
    1 c. sliced carrots
    1 c. diced onions
    1 clove garlic, minced
    1 tsp. dried basil
    2 small zucchini (unpeeled), sliced
    1 lb. 12 oz. can Italian pear tomatoes (undrained), chopped
    3 beef bouillon cubes, dissolved in 1 1/2 c. boiling water
    2 c. finely shredded cabbage
    1 (1 lb.) can Great Northern beans (undrained)
Preparation
    Slice sausage crosswise about 1/2-inch thick.
    In a large kettle, brown sausage in oil.
    Add onions, garlic, carrots and basil.
    Cook for 5 minutes.
    Add zucchini, tomatoes, liquid bouillon and cabbage.
    Bring to a boil.
    Reduce heat and simmer, covered, for 1 hour.
    Add beans and their liquid; cook another 20 minutes.
