Ingredients
    2 1/2 c. sifted all-purpose cake flour
    3 tsp. baking powder
    1/2 tsp. salt
    1/2 c. soft shortening
    1 1/3 c. sugar
    1 c. milk
    1 tsp. vanilla extract or almond extract
    1 c. grated fresh coconut
    4 egg whites
Preparation
    Preheat oven to 350\u00b0.
    Grease two 8-inch pans and line bottoms with wax paper.
