Plain Rice - Japanese Style - cooking recipe

Ingredients
    3 c. short-grain white rice
    3 1/3 c. water
Preparation
    Place the rice in a colander and put it in a bowl of water. Wash rice by stirring it with your hand.
    The water will become cloudy.
    Empty the bowl, then fill it with fresh water.
    Repeat process several times, until the water runs almost clear.
    Let the rice drain in the colander for about 30 minutes.
    Put the rice and water in a deep, heavy pot; cover and let sit for 30 minutes. Cook over medium heat until the water boils, then reduce heat and simmer for 10 minutes, making sure the water doesn't boil over. Cook the rice over low heat for another 10 to 12 minutes, then remove the pot from the heat and let sit for 10 to 15 minutes. Don't remove the cover during this time.
    Fluff the rice with a damp wooden paddle.
    Drape a kitchen towel over the pot and cover with the pot lid until serving.
    Makes 6 cups.
