Alligator Stew - cooking recipe

Ingredients
    2 lb. alligator tail meat, cut into pieces 1/2-inch thick
    1/2 c. oil
    1/2 c. green onions, chopped
    1/2 c. onion, chopped
    1/2 c. bell pepper, chopped
    1/2 c. celery, chopped
    2 Tbsp. minced parsley
    1 (10 oz.) can tomatoes with chiles
    salt and pepper to taste
Preparation
    Brown meat in oil.
    Add remaining ingredients.
    Cover pot. Cook over medium heat for 30 to 40 minutes.
    Serve over cooked rice.
