Eggplant And Friends - cooking recipe

Ingredients
    1 fairly small eggplant (unpeeled)
    1 medium size onion, sliced
    1 medium zucchini, sliced
    1 medium squash, sliced (yellow)
    1 green pepper, sliced in circles
    1 or 2 tomatoes, peeled and sliced
    1 c. grated cheese
    1 clove minced garlic or garlic salt
    1 c. bread crumbs
    about 1/4 c. butter to dot top
Preparation
    Layer eggplant, onion, zucchini, yellow squash, green pepper, sliced tomatoes and grated cheese in large casserole, sprinkling seasoning 2 or 3 times during layering. Cover with buttered bread crumbs and bake at 350\u00b0 for at least 45 minutes. Serves about 6 persons.
