Morning Glory Muffins - cooking recipe

Ingredients
    4 c. flour (1/2 whole wheat)
    2 1/2 c. sugar (can use less)
    4 tsp. baking soda
    4 tsp. cinnamon
    1 tsp. salt
    4 c. grated carrots
    1 c. raisins
    1 c. shredded coconut
    1 c. chopped pecans
    2 apples, peeled, cored and grated
    6 large eggs
    1 1/2 c. vegetable oil
    1/2 c. water
    4 tsp. vanilla
Preparation
    Into a large bowl, sift together the flour, sugar, soda, cinnamon and salt.
    Stir in the carrots, raisins, pecans, coconut and apples.
    In smaller bowl, beat the eggs, oil, water and vanilla.
    Add to flour mixture and stir until just combined; don't beat!
    Spoon into well oiled or lined muffin tins.
    Bake at 350\u00b0 for 35 minutes.
    Makes 30.
