Potato Fajitas - cooking recipe

Ingredients
    12 to 16 oz. boneless, skinless chicken
    Fajita Marinade
    2 Tbsp. vegetable oil
    4 (8 oz.) Russet potatoes, baked
    1/2 c. sliced onion
    dairy sour cream
    1 c. sliced red peppers
    1 c. sliced green peppers
    1 c. sliced yellow peppers
    guacamole (optional)
    shredded sharp Cheddar cheese
Preparation
    Slice chicken into strips.
    Marinate in Fajita Marinade about 1 hour.
    Saute chicken and onion in oil until onions are tender. Add peppers and cook about 3 minutes or until chicken is thoroughly cooked.
    Slit top of potato, squeeze to fluff, spoon mixture over.
    Serve with cheese and sour cream.
