Ripe Tomato Relish - cooking recipe
Ingredients

1/4 bu. (about 15 lb.) ripe tomatoes
15 hot peppers
3 Tbsp. salt
2 tsp. allspice
3 c. vinegar
1 tsp. pepper
6 large onions
8 large bell peppers
6 c. sugar
6 tsp. cinnamon
3 tsp. mustard
2 tsp. ginger
2 tsp. cloves
Preparation

Peel and core tomatoes; place in a large pot. Peel and finely chop onions. Finely chop bell peppers and hot peppers, then add spices, sugar and vinegar. Stir ingredients thoroughly. Cook until thick. Stir often to keep from sticking. It will take about 3 hours to cook down. Pour in jars and seal.
