Basmati Rice Pilaf With Peas(Matar Pulao; Serves 8) - cooking recipe

Ingredients
    2 c. basmati rice, uncooked
    1 Tbsp. butter or ghee
    1 medium garlic clove, minced
    1 cinnamon stick
    2 green cardamom pods
    1 tsp. salt
    1 1/2 c. peas
    1/2 c. blanched, sliced almonds
    2 medium zucchini, thinly sliced
    2 medium yellow squash, thinly sliced
    2 tomatoes, thinly sliced
    2 onions, thinly sliced
    1/2 c. Italian-style bread crumbs
    4 to 6 oz. grated Mozzarella
    milk
    oregano to taste
    rosemary to taste
    basil to taste
    red pepper to taste
    salt and pepper to taste
Preparation
    Spray a large casserole with nonstick vegetable spray.
