Mexicali Sausage Casserole - cooking recipe

Ingredients
    1 c. sliced onion
    2 c. cooked rice
    1 (1 lb.) can tomatoes
    1 lb. Italian sausage (I use 1/2 lb. hot and 1/2 lb. sweet)
    2 Tbsp. vegetable oil
    2 c. sliced zucchini (1/2 lb.)
    1/2 tsp. cumin
    1/4 tsp. Tabasco sauce (you may want to omit if using hot sausage)
    1/3 c. grated Parmesan cheese
Preparation
    Remove casing from sausage.
    In large skillet, brown sausage, breaking up with a spoon as it cooks.
    Remove from skillet; set aside.
    In same skillet, saute zucchini and onion until crisp-tender.
