Carrot Muffins - cooking recipe

Ingredients
    1 c. white sugar
    3/4 c. oil
    2 eggs
    1 tsp. baking soda, dissolved in 1 Tbsp. warm water
    1/2 tsp. salt
    1 tsp. baking powder
    1 tsp. vanilla
    1 1/2 c. flour
    1 c. grated carrots
Preparation
    Beat sugar, oil and egg.
    Add baking soda, water and vanilla; mix well.
    Add flour, salt and baking powder.
    Mix until moistened.
    Stir in grated carrots. Bake at 375\u00b0 for 15 to 20 minutes.
    Yields 1 dozen carrot muffins.
