Virginia Eakman'S Chicken Terrapin - cooking recipe

4 Tbsp. flour
4 Tbsp. butter
2 c. milk or 1 c. milk and 1 c. broth
1 tsp. cream mustard
3 hard-cooked egg yolks
3 Tbsp. lemon juice
1 1/2 c. diced chicken
2 Tbsp. slivered ripe olives
2 Tbsp. slivered pimientos
3 hard-cooked egg whites, slivered
green pepper slices
Preparation

Make a cream sauce with flour, butter and milk.
Mash the egg yolks with mustard and add to the sauce.
Let this stand over hot water for 1 hour.
Add lemon juice, chicken, olives and pimientos and cook until heated through.
At the last minute, add egg whites.
