Banana Split Muffins - cooking recipe

Ingredients
    2 c. packaged biscuit mix
    1/4 c. sugar
    2 egg yolks, beaten
    2/3 c. milk
    2 Tbsp. shortening, melted
    1/2 small banana
    12 maraschino cherries, halved
    12 walnut halves
    2 egg whites
    1/3 c. sugar
    2/3 c. flaked coconut
Preparation
    Combine
    biscuit
    mix
    and
    1/4 cup sugar.
    Combine egg yolks, milk
    and shortening.
    Add the milk mixture all at once to the dry
    mixture,
    stirring
    just to moisten.
    Place 1 1/2 tablespoons of
    batter
    in each of 12 cups of a greased muffin tin.
    Cut
    the banana
    into 12 cubes.
    Place a banana cube, a cherry half
    and
    a walnut
    half atop the batter in each cup. Cover
    with
    a tablespoon more batter.
    Beat egg whites until soft
    peaks
    form. Gradually
    add
    the 1/3 cup sugar, beating until stiff
    peaks form.
    Fold
    in
    the coconut.
    Place 1 1/2 tablespoons of this meringue on each muffin.
    Top with remaining cherries.
    Bake at 400\u00b0 for 15 to 20 minutes.
    Makes 12.
