Guatemalan Fried Rice - cooking recipe

Ingredients
    2 Tbsp. shortening
    2 c. rice
    1 small onion, chopped
    1 garlic bud (whole)
    1 tomato, chopped
    2 Tbsp. peas
    2 Tbsp. green beans, chopped
    1/2 carrot, finely chopped
    1/4 green pepper, chopped
    3 c. water
    1 tsp. salt
Preparation
    Heat shortening.
    Add rice and fry until nicely browned, stirring constantly.
    Add onion and tomato.
    Cook slightly.
    Add water and other vegetables.
    Cover and bring quickly to a boil. Lower heat and cook about 45 minutes or until done.
    Do not stir. When serving, remove with a fork.
